Healthy Vegan Oatmeal Cookies

These oatmeal cookies are a delicious healthy, low fat snack to enjoy whenever. They're quick to make and only use everyday ingredients that are 100% cruelty free and easy to find.

INGREDIENTS:

1/2 cup whole-wheat flour 1/2 cup all-purpose flour 1 tsp baking powder 1/3 cup applesauce 1/2 - 2/3 cup unrefined sugar 1 Large Egg Substitute (I use Orgran) 1 tsp vanilla extract 1/2 cup rolled oats Handful of raisins/chocolate chips/nakd nibbles/diced strawberries

DIRECTIONS:

1) Preheat oven to 350F/180C. In a small bowl mix together flours & baking powder and then set aside.

2) In a large bowl whisk together applesauce, sugar, egg substitute & vanilla extract.

3) Combine wet with dry and then stir in oats and raisins/chocolate chips/nakd nibbles/diced strawberries.

4) Shape into cookies using 1 tbsp mixture for each and place onto a baking tray lined with parchment paper and greased with cooking spray and bake until light browned, approximately 15-20 mins.

5) Cool on tray for 5 minutes before transferring to a cooling rack.
